I thought it might be fun to post a few recipes for the holidays.
 
How to Reheat a Whole Smoked Turkey
 
Preheat oven to 325 degrees
Place your turkey in a roasting pan with about 1 Cup of low sodium chicken broth or apple juice.  Brush a little olive or vegetable oil over the skin to keep it pretty.  Then, cover it tightly with aluminum foil and stick it in the oven.  For a small turkey, you need to give it about 1 1/2 to 2 hours, a large one needs 2 to 2 1/2 hours to heat.  Internal temperature only needs to get to about 150 degrees, since it's already cooked.  Carve and enjoy!
 
How to Reheat Turkey Breast
Preheat oven to 325 degrees.  Heat only the amount of turkey you actually plan to eat.  Wrap turkey tightly in foil and lay directly on oven rack.  Heat for about 15 minutes for each 1/2 pound of turkey.  Less time is required if your breast is already sliced.  Just check it every 10 minutes or so.
 
 
Smoked Sausage Gravy
 
1/2 pound smoked breakfast sausage
Brown in a cast iron skillet.
 
about 1 Tablespoon oil or shortening
Melt into sausage (There's really not enough fat in the sausage to make gravy, so one must add a little)
 
about 2 Tablespoons of flour, enough to make a very thick paste
1/2 teaspoon salt
dash black pepper
Mix into sausage and drippings.  Brown for 3-5 minutes, stirring occasionally.
 
3 Cups Milk
Add to pan, stir well, simmer until thick.  If your gravy is too thick, add more milk.
Eat it over fresh hot biscuits.
Yum.
 
 
Pizza In a Pinch
 
This is actually not my idea.  My Aunt Elain forgot to buy pepperoni for birthday pizza, so she improvised this.
 
Preheat oven to 400 degrees.
 
Mix 2 packages of jiffy pizza crust mix according to directions.  Pat out on your round pizza stone or a cookie sheet.  Bake for about 5 minutes.  Remove from oven and top with marinara sauce, shredded cheese (you could use mozzarella or our smoked cheeses), your choice of veggies, and thinly sliced summer sausage.  Stick it back in the oven for 5 to 10 minutes until the cheese is melted and it's all sizzly.
