Big Springs Specialties Big Springs continues the tradition of wonderfully smoked foods from the Ozark Mountains. We cold hickory smoke our hams, turkey breasts, bacon, cheeses, jerky, and our summer, Ozark, and breakfast sausages. We cook our brisket, pork tenderloin, baby back ribs, buffalo wings, whole turkeys, chickens, and catfish filets in our hot rotisserie smoker.
